The exclusive island location of Sunset Key’s Latitudes restaurant is one that chefs dream of, and Executive Chef Todd Holender takes full advantage of his tropical surroundings. Chef Todd, as he’s known, works his culinary magic in Latitudes’ Hemingway Room, where photos of author, avid fisherman and former Key West resident Ernest Hemingway adorn the walls, lending a nautical air to the restaurant.
Guests can also choose to dine alfresco on the adjacent patio overlooking the Gulf of Mexico or under the stars at romantic tables set on the beach and illuminated by tiki torches.
In this breezy island setting, Chef Todd is inspired to create an ever-evolving menu where he incorporates ingredients such as locally-sourced fish and tropical fruits, using classical techniques. Menu items change frequently based on what is fresh and in-season. Popular highlights include:
- Pan-seared snapper served with citrus risotto, asparagus, ginger-lime cream sauce, tropical fruit relish and crispy plantain
- Honey & ancho chile crusted Waygu beef skirt steak with roasted garlic potato puree, goat cheese and corn cake, sauce romesco and fried onions
Latitudes is open for breakfast, lunch and dinner. Hours are 7 a.m. to 10 p.m. Sunday through Thursday, 7 a.m. to 11 p.m. Friday and Saturday. Attire for breakfast and lunch is casual. Shirts and shoes are required. Attire for dinner is "country club casual." Collared or dress V-neck shirts and dress shorts are acceptable. Tank tops and/or cover-ups are not allowed for dinner. Reservations are required.

Guests of Sunset Key Guest Cottages, A Westin Resort, enjoy special privileges from Latitudes. Cottage guests receive a complimentary Breakfast Basket delivered to their cottage porch each morning consisting of freshly baked muffins, other bakery specialties, orange juice and newspaper. In-cottage dining service is also available.
Chef Todd’s Culinary Background
Chef Todd joined Latitudes in 2008 and was named executive chef in 2012. A Florida native, he learned to love cooking at his parents’ restaurant in Port Everglades, honing his skills at Inverrary Country Club, near Fort Lauderdale, where he became a chef at age 18. He further perfected his abilities at the Orlando Culinary Academy, an affiliate of Le Cordon Bleu Schools.
At 24, he opened Zabella Ristorante in Winter Park, serving as executive chef and part-owner. After being open just a short time, Zabella was acclaimed as Orlando’s best restaurant and the city’s top restaurant for bar dining. Chef Todd went on to work in top restaurants across the United States, including North Carolina, New York, Maine, Utah and New Hampshire.
His travels in the U.S. and abroad have allowed him to develop his own culinary approach, beginning with classic French techniques and building from there, using locally available ingredients.
